These are great little pumpkin popover muffins that can be had for brunch, breakfast or dessert! Freeze and reheat in the microwave for one minute.
This is adapted from Rachael Ray Mag - Cauliflower, Sweet Onion and Leek Quiche. It's really low cal and a delish breakfast or high protein snack!
I first found this recipe back in the '70's when I started my tree-hugger days. It always has reminded me - in taste ans smell - of "real" meatloaf .
"This rich recipe is great for either a brunch or breakfast. You can make this a day ahead if you want to serve it for an early morning breakfast. Just reheat in the microwave. You may use any combination of cheese in this recipe, even non-fat."

I made this when I was craving apple pie. It would go great alongside oatmeal, or as a topping for whole wheat pancakes. This only makes one serving, but it can easily be quadrupled for brunch parties, etc. And it's a pretty color too! It seems a little high in fat and cals. but that's from the heart healthy walnuts.
Eat alone or on your favorite bread. This is made with left over boneless/skinless turkey breast. For the turkey and pickle I shreaded both in my mini chopper. The mayo is a bit much but the shreaded turkey turned into a lot of dry turkey( 2.5 C.). I also used enough of the pickle for taste(2 TBLSP).
This is calculated on a 1/2 c. of spread for a sandwich. It's more than you think for spreading.
For dieters, the oatmeal keeps you full so much longer than regular pancakes, the apples add extra sweetness without having to add sugar. And the optional walnuts give you some extra protien for an excellent start to your day.
