This a quick frozen breakfast. My kids love it and I get lots of fruit in them to start the day!
Found this recipes on the internet and modified it by adding less sugar and whole wheat flour. I've also added rasins and blueberries on occasion. Be careful to not take out too much more sugar as they don't taste very good. I've thought about trying raw sugar to see what that does. I also have added flaxseed, bran and oatmeal to the mix. They are very moist for bran muffins and make a lot. They freeze well.
This is a wonderful mini-loaf that is best enjoyed on its own. It has the best savoury taste, perfect for those 'salt craving' moments, but minus the heavy calories. And so simple to make too!
