This is an Indian version of a savory Cream of Wheat meal that is good for breakfast, lunch or anytime. It is also a very good vegan dish it is quick and easy to prepare. This is especially good when a little Tomato Rasam is drizzled over it. You can find most all of these ingredients in an Indian market - even a quick Tomato Rasam (soup) mix!

This recipe make about 4 2-3" pancakes. They're not very sweet, but then sweet is what got me so fat and in need of Spark! I added about 1-2 tsp. of honey and they're sweet enough. Any suggestions to improve would be welcomed. I used left over boiled sweet potato, but couldn't find calorie amount for boiled no salt, so used the baked w/o salt calorie information.
I found these in a cooking magazine (taste of home cooking for 2 fall 2006) and modified it slightly by doubling the recipe (total of 4 servings). These are great, very easy to make and my family loves them!
This is my mom's recipe and one of my favorites. Of course when she makes it its a bit heavier in calories. You can definitely use fat free products or low fat.
Mix ingredients adding milk and stir. May need to add more milk depending on how think you like your pancakes. Add more or less egg substitute depending on how much protein you want in your pancakes.
