Peel, core and shred the apple.
Combine dry ingredients into a large bowl and stir together. Add wet ingredients to the dry ingredients.
Mix all ingredients together. Batter will be lumpy. Put into muffin cups or small loaf pans, about 2/3 full. Bake at 400 for approximately 20 minutes.
Easy to put all together and bake. Great for a big group and you need something with simple preparation.
