This is a great use of vegetables. This is very fresh and delish. The recipe would very well serve 3 but I am being pigish and I know it's all healthy no matter what the calories tell me!!

I wanted a sweet treat to go on my yogurt and oatmeal. I got sick of cutting berries every time, so I thought I'd cook them up and make a yummy compote. This would also go great on pancakes, french toast and waffles. Of and ice cream, angel food cake or even straight to your mouth! Yum!
I have a ton of tomatoes and veggies to use up from the garden, so I thought I'd make a mish mash of veggies and pasta, with a few shrimp thrown in.
This is a great week-end brunch recipe. Serve it with either corn muffins or whole wheat toast and strawberry preserves. We cook this whenever we have left-over rice and ham from the night before. We have also just cooked the leftover rice and no meat, and it is just as delicious and far lower in fat and calories.
