Crunchy pinwheels are tasty additions for a brunch (recipe adapted from Parade magazine, December 20, 2009).
Good way to dress up corn for company or a potluck. Or when you just want something different. This also is great for breakfast and brunch, since it has protein and fiber.
A light-tasting orangy quick bread, also good as muffins. Perfect for breakfast or afternoon tea or coffee. Only a gram of fat per slice. I used gluten free flour, but you can substitute regular flour and eliminate the xanthan gum if you want.
You can use any veggies in this quiche, and any cheeses besides the ricotta. I make it without the crust to keep it gluten-free but you can put it in a pie shell, too.
Mix all ingredients (except kethcup) by hand. Form into loaf in loaf size pan. Spread the ketchep on top and bake at 350 for 1 hr.

You have to at least have a 2 liter bottle of Sparkling Water to do this with though. I always add frozen fruit to my Lemonade drinks during the Summer. You can use any frozen fruit you like. It's an added treat for me. I always add the frozen fruit individually along with crushed ice is best.
