Altered from "Downeast Maine Pumpkin Bread" on Allrecipes.com to make it a little bit healthier. This is delicious with a cup of coffee or just a light dessert! Even with applesauce substituted for the majority of the oil, it's super moist and keeps well.

This is a recipe submitted by BecR on Recipezaar. I substituted walnuts for the almonds because I didn't have any almonds, but otherwise the ingredients are the same OK, I didn't have any sea salt, so I used regular salt, but other than that, it's as BecR wrote it. Oh, wait, I used sweetened coconut too...

this recipe usually uses 1 cup of oil but I substituted the applesauce for most of the oil. I have seen it with whole wheat flour and others have added nuts.

These are NOT diet friendly! I made a batch and brought them to work! Everyone at work said they were amazing! Bake with caution if you are trying to eat healthy!
Directions:
Preheat oven to 375 degrees. Prepare muffin pan with cooking spray or liners.
Whisk together flour, baking powder, salt and cinnamon. In a separate bowl, mix together egg, vegetable oil, sugar and milk. Make a hole in the dry ingredients and pour in wet ingredients. Mix together until just combined. Do not overmix. Batter should still be fairly lumpy. Stir in chopped fruit (if youre doing a combination, you will want to divide the batter first).
Fill muffin tins about two-thirds full. Bake for 20-25 minutes, until golden in color.
Yield: 12 muffins
