I'm playing around with Jambalaya recipes, trying to get close to the one I've been making my family using a seasoning that is no longer available. This one uses a cajun seasoning that I made - recipe can be found her on spark recipes.
This is definitely spicy, adjust the cajun seasoning and tabasco to your palette.
This is really good with a piece of french bread to sop up the juice.
Attmitedly not particularly low-fat (RIBS!), but this is my mom's old recipe, and they are absoletly worth making as a treat once in a while. Father's day, perhaps?
Chicken, onions, finely processed walnuts, and pomegranate juice are simmered to perfection. The sauce should be as thick as a good chili. Serve with saffron steamed basmati rice. Enjoy! If you prefer, substitute angelica powder for cardamom; instead of pomegranate juice, you can substitute 1/2 cup pomegranate paste diluted in 2 cups water.
One of the few ways my husband appreciates rice and very easy to prepare in one dish.

1 medium onion

This is a great fall dish that is also very versatile. I have used Maple Garlic kick in leiu of Cinnamon and Nutmeg. I use "I can't believe its not butter light" to cut down on calories, but whatever your favorite butter/margarine is will work the same, just change the cals.
It can be served as a side with maple garlic chicken, an appetizer, or a meal if you are not super hungry! You could probably even scoop out the inside and puree it for a tasty soup!
