Very tasy meatloaf with an italian twist. By using Turkey sausage you both lower sodium and fat. I use a jelly roll pan instaed of loaf pan, to get more of the fat away from the meat

When a person is allergic to beef, turkey and chicken and is left with very few foods to cook , one needs to get creative with pork. I would never go back to beef, even if my allergies eventually disappear. (much better flavour)

I double the recipe then add salt, pepper, and granulated garlic to taste while sauteing the squash and onion. Then, when adding the rest of the ingredients, I add the meat from a whole large roasted chicken from SAMs. 6 - 8 pre-cooked chicken breasts also do the trick.
