Moon's Low Fat Creamy Pesto
I've been making homemade pesto for years. Previously, I had used full fat yogurt, walnuts or pine nuts, and parmesean. Then, it struck me that nonfat cottage cheese might work perfectly in this recipe. It does! Enjoy this healthier, lighter version of creamy pesto on pasta, salads, or as a veggie dip.
