This recipe is the result of lots of experimentation. I wanted to enjoy iced lattes without all the added sugar or fake sugar. I use almond milk because it add a lot of texture and flavor and is very low-cal. I originally used coconut milk which taste good, but wasn't as creamy and tended to dilute the coffee flavor. I like this even better now than the ones I used to drink!

I used my professional grade Vita Mixer for this recipe. It might not do as well in a standard blender, since the craisins might not grind up as easily.
If you can't stomach carrot juice by itself, this makes it a little yummier, plus you now have protein from the milk.

Note: I make a habit of freezing bananas before they go bad. I peel and halve the bananas and put them in freezer bags so they're ready to throw in a smoothie. Frozen bananas make the smoothie more cold, frothy, and creamy.
