Exchanging foods that are high in calories for lower caloric foods can make comfort foods like stew healthy. I've exchanged the potatoes for turnips and used a very lean beef. I don't measure what I put in, so you can make as little or as much as you like. This recipe is for a large pot that serves at least 12. You can also add more vegetables than I did. I adapted to what the kids will eat!
This is a sauce made with spinach that is great over mashed potatoes instead of gravy!
Bake pork chop add .25 c of water
Cook Noodles - drain and put in small baking dish
Slice Apples on top of noodles
melt butter and pour over apples & noodles
sprinkle with cinnamon
Bake till apple slices are tender
Serve with a salad.

This is a quick and easy slow cooker soup. You can cut the sodium down by using low sodium broth and soups.
A short cut to having to peel / chop potatos and onions is to use a bag of Simply Potatoes with onions. Add Salt & Pepper to taste.
Minced pork or chicken will be equally as delicious to the traditional beef in this spicy, rich soup.
Add oats, honey, vanilla, margarine and cinnamon in a bowl. Heat milk until hot (microwave about 2-1/2 minutes). Pour over oats etc. and mix together. Let sit for 15 minutes. Then add eggs, flour and baking powder. Stir.
Heat Waffle iron and cook waffles.
I modified a recipe found here on spark people to meet my needs - I'm cooking for one, so I don't need 4 or 5 extra servings as left overs in the fridge. This is surprisingly filling.
My mom loves the Prince Edward County rye bread from Stonemill Bakery, but it's expensive and hard to find. I made her *my* version based off a German country loaf recipe - tangy with yoghurt and sourdough starter, hearty with Red Fife, dark rye, oats and sunflower seeds and crusty from a multi-temperature baking process. It's a loaf with definite staying power on our menu!
