Get the crockpot out, load it up before you go to work and come home to a savoury, yet healthy low carb soup. Add a nice sprouted grain bread to the meal, and you're good to go.
This is not too dissimilar to a number of sauerkraut recipes here, with the exception that I prepare it as a side dish, without pork chops/sausage/pork loin/whatever added in.

This recipe has been made over generations in my family. Traditionally, the crust is made with unsalted butter, flour and a little sugar. Italian Prunes are used; they are different than traditional plums because they have a yellow skin. These come into season around the fall, and can be tricky to find. This is a vital ingredient to use-- traditional plums don't work for this! Cinnamon-sugar and melted butter is added on top of the tart-- I'd tell you the Bavarian name, but you could never pronounce it! "TZVE-TZIN-DATCHI".
To speed things up, today, I used a quality pre-made pie crust from Trader Joe's.
Can be eaten with bread or a pie crust can be added before baking the mixture. Allow for more baking time or higher temperature
The pork sausage used here is the same you would use on a sandwich. Just have it cut into 0.5 inch thick slices.
Cover with water, salt and pepper. Simmer until tender, drain. Then mix 3 Tbsp. flour and 2 cup milk. Add to vegetables, stir until smooth. Add 1/4 cup cubed ham and 8 oz. Velveeta cheese. Let melt and stir. I also use an immersion blender to give it that creamy texture prior to adding ham and cheese.
