This is a lovely and unique gluten-free option for a spring brunch. Takes little effort to make, but the results are fantastic!

But despite all that... it is SOOO GOOD! It disappeared in a day.It is especially good hot out of the oven with a dab of Smart Balance Butter on top. yum.
