This recipe freezes really well! I separate the cooled latkas with wax paper and freeze in a zip lock. They are great as a quick breakfast food. Just microwave for a minute or so and they're almost as good as fresh!
Mom always served them with applesauce and sour cream. Plain yogurt is a great substitution for the sour cream.
