This recipe is great if you're in a hurry. Layer everything into a solo cup and eat it on the way to work! This falls into my "carbalicious" category, but it does contain at least some fiber, fat and protein. On the glycemic load scale, it's still pretty good compared to a rice cake. I also consider it comfort food -- sweet, crunchy, medium fat, fruity AND you get to eat it with a spoon.
