Shrimp Vindaloo
A slightly modified, but rather Authentic Indian recipe. I love Indian food, especially vindaloo but as I cannot eat chicken, I had to modify.
Spicy Roasted Cauliflower-Potato Mash
Great change of pace from plain! Leave potato peel on or off & mash ingredients to your preference. Good mashed or left overs as vegitarian pattie.
Healthy Curried Yogurt Masala sauce
-Yogurt replaces cream in this dish. Makes it lower in fat and calories plus much higher in protein. (And in my opinion even better tasting with the thickness and tang the Greek yogurt gives).
-In the picture above I had served the sauce over rice with roasted asparagus and sauteed chicken and red peppers - very tasty!
