Originally taken from Idiots Guide to the Superfoods Cookbook, and then modified to suit my liking. I quadrupled the original portions to make this for a potluck-hence, the large servings above!

This is my favorite meal when I want pasta but can't have it. This feels so rich and hearty, but it is low in fat, calories, and carbs; but high in fiber, potassium and deliciousness! P.S. It also freezes well when assembled in layers. Feel free to swap the beef with ground chicken, pork, turkey, or even tvp.

I named this counter food because, while I was making it I spilled Feta all over my counter... and then proceeded to scoop it back up off of the counter because it was all the feta I had left. :D But the meal turned out really, really good and I hope you like it!
