This is a beautiful dish, thats great for entertaining. Easily doubled.

Goes well with most meats. I usually serve with chicken or fish. I love to use my pressure cooker to cook chicken thighs, strip the meat off the bones after cooked and add the meat to the polenta. I have not figured in the meat for this recipe. Quick and really tasty.

I enjoy Baked Ziti. However, since dieting I have been able to eat it. So, I decided on Father's Day to revise my recipe to make this fit into my daily meal plan without consuming to many calories. My wife has less calories than I have so I made it work for the both of us.
