This is my Mom's recipe...She never used breadcrumbs or purged the Eggplant and I have loved this dish since I was a child. It is very satisfying as it is full of flavor and cheesy while still be "diet" friendly.
I normally don't eat the pasta with this recipe...too many carbs for my taste...but when I like to "splurge", I'll eat the pasta and my kids enjoy this very much.
This is off of cooks.com, I want to add this to my own site so I can compare it with one I'm making that will be much healthier, in theory.
Another one of my patented healthyish pizza's, you won't find them much smaller of a calorie per slice elsewhere.

So there's this Pennsylvania Dutch Lazy Lasagna recipe, here's a version with some healthy stuff in it, could probably be even better with some reduced fat Parmesan cheese.
