This is a basic variation on Italian amatriciana sauce - I substituted bacon for the pancetta and added some fresh veggies. The seasonings can be varied according to taste, and 1/3 cup of wine can be substituted for some of the water. Fresh roma tomatoes could be chopped and substituted for the tomato sauce to cut down the sodium.
This is a really delicious, richly flavored soup. It's a great accompaniment for most any meal. Perfect for a cold, rainy day!
There are lots of options in terms of flavoring this soup. Don't like fennel? Leave it out! Love rosemary? Add some more! Always taste your soup and add whatever you think is necessary, no soup should ever be bland!
