This is a very healthy appetizer. Low Carb, low fat. It'll go over well at parties and is very tasty. I serve with reduced fat Triscuts or other healthy cracker or crusty bread.

Melt butter in a skillet and brown chicken breasts. Drain juices from cherries and pineapple into a mixing bowl. Reserve the fruit and add sherry, soy sauce, garlic and ginger to the juices. Stir to blend. Pour juice mixture over chicken. Cover and simmer 30 minutes. Remove chicken to warm serving dish and keep hot. Combine cherries, pineapple, celery, and red pepper in the pan. Dissolve cornstarch in the water and stir into pan. Cook and stir until mixture thickens. Pour over chicken
When I make these fatty, I roll them in egg and seasoned flour, then fry them in oil. This way, I skip most of the oil and all of the flour and egg saving over 100 calories per wing- until Super Bowl...hehe
