This is a low carb taco soup that is very easy to make and is delicious. You can vary the recipe in any way you want. If you want a more mild onion flavor, only use half an onion. We just like it with more flavor. We also use red onions.
Layer 1/2 meat, eggplant, zucchini, cheese, then sauce. Layer all ingredients again. Cover with foil and cook at 400 for 30 minutes. Remove foil and continue cooking for 15 minutes.

Mke this in muffin cups sprayed well with cooking spray for easy travel food. I bake mine in a cast iron skillet because it's easier prep, but it needs to be eatenout of a dish this way. You can freeze these, just be sure to thaw the night before. Warm them in 30 second intervals in the microwave, flipping one time.
