I looked at dozens of recipes to develop a version I thought I would like - WW cabbage soup, vegetable soup, hamburger soup. I eat at least 15 vegan meals a week and have 6 flexitarian meals. So I made this one so close... really close... to being vegan, but with that little taste of meat. A low carb soup, this should should do it.

my mom used to make this and we all went crazy for it. I tried the "mixes" for taco seasoning, and found I am spoiled by the real deal. Use for soft tacos with steamed corn tortillas, tostatos using crisp corn tortillas or burritos using flour tortillas. We also make taco salad if and when there are any leftovers. The condiments and tortillas are not calculated into the total calories, but use your discretion and will power when you treat your family to this tex-mex family favorite. We love it!
