Chicken Salad #1
I love using boneless, skinless chicken breasts that have been poached, grilled or roasted as the base for chicken salads. This has become one of our favourites. It is very fast and easy and only 75 calories a serving!
I have served this on top of crackers as an appetizer/snack, used it in sandwiches and served it on top of a bed of greens as a main lunch dish as well. It is always well received.
Hot-chos
This is a nacho-style hot dog dish that is great if you are looking for something different while low-carbing. You could also add chopped up hot dog buns if you aren't concerned about carbs.
