I got this recipe from my sister. I'm not sure if she makes hers with as many veggies as I did, but they turned out great! These salmon cakes have almost as much veggies as they do salmon. They're such an easy and super tasty way to sneak in those extra veggies! I served these cakes to my mom, aunt, brother and uncle (who does NOT like salmon cakes) and they all loved them! My aunt immediately wanted the recipe! Hope you guys enjoy them as much as we did! I want to apologize if some the specifics aren't completely accurate, I don't really like to measure so I had to estimate on a few things.

I like to make this with the leftover chicken from a Costco roast chicken. You can make it even lighter by using less mayo and more fage (greek unsweetened nonfat yogurt) but you need SOME mayo or it won't taste right.
