This is a very versatile EASY thing to make! You can easily swap for pasta, gluten free pasta or even rice. Cilantro, Lime & Salsa are all optional if you would like to make it as a taco! You can use any wrap, just make sure you adjust the recipe to change nutritional info!
I needed something spicy for lunch, high in protein and low in fat and carbs. This is what I came up with
A little strange: tastes like molasses cookies, but not so sweet. Doesn't need syrup, just put a little unsweetened applesauce on top. Makes 10 pancakes. They are very filling. Eat slowly. Can be made with a lot less calories: use just 1 egg, less oil, more quinoa, low fat yogurt and milk, but I made it as a 5K recovery meal, so I used whole milk yogurt and regular milk.
