I wanted chicken salad but had no mayo! So I threw this together!
This is only one serving, but of course could be made in bigger quantities.
You can put this in a pita, on crackers (low-carb best), or in a salad. YUM!

This is a filling and flavorful chicken salad recipe that is easy to make.
Cut the potatoes and carrots in cubes, and mince the garlic. Add to chicken broth. Bring to a boil over high heat. Simmer for 20 to 25 minutes until vegetables can be easily pierced with a fork. Blend using a hand blender. Add cream and simmer for an additional 10 minutes
Creamy hummus, with the garden fresh taste of Basil. Great with crackers, chips, and veggies.
Note, you can reduce the fat by eliminating the olive oil, my diet is usually lower in fat that what it should be, so I add it in.
