Quick easy snack.
Add a handful of baby carrots or apple slices for a satisfying, light lunch.
Using the vanilla yogurt makes this a light and sweet lunch. You can use plain yogurt if you like. You can serve on a salad or on light bread for a sandwich. I use Pepperidge Farm Light Oatmeal bread. You can also use canned chicken if you don't have cooked chicken breast available. I would recommend rinsing the canned chicken well to reduce sodium.
This soup is 12 carbs per serving. If you would prefer 9 carbs per serving leave out the tomatoes. Canned tomatoes are surprisingly high in carbs. Chili powder also is surprisingly high in carbs for a spice - 4 carbs per tablespoon!
This is entered with regular mayonnaise, but you can substitute light mayo or yogurt if you want to.
