Namely, switch zucchine for green peppers and changed some of the vegetable weights to what I had at home. I usually serve with either, plain polenta (harina de maiz or funche), boiled Carribean root vegetables, like green bananas, taro root, mountain yam, pumpkin (calabaza), breadfruit, malanga and, tanier to name a few.
