This delicious recipe is NOT my creation. It is from the website www.peasandthankyou.com - check out this website for great vegan recipes!
I used agave nectar instead of maple syrup, and I did use real reduced fat cheese rather than the Daiya shreds. I did not add any additional toppings. The nutritional information reflects these changes.
This is a yummy refreshing side dish packed with protein and fiber but low in fat!!!
A delicious twist on my grandma's traditional mexican pumpkin empanadas. Now all vegans can enjoy this! It is animal free and absolutely amazing. Enjoy!

Feel free to mix and match flavors of CL and Fresca, or go virgin if you like.
Love this recipe. Might be good made with added chicken or beef. Got it out of Taste of Home Magazine. Can't remember which month and year. Don't remember where I got the recipe but I've enjoyed this layered brunch entree for years. -- Marilyn Morey of Mallard, Iowa.
This has the fajita name only because of the ingredients. There are no tortillas in this recipe. My whole family loves this one!!
This is so easy to put in the crockpot so you have a delicious meal waiting for you. I use individual frozen chicken tenders or breasts so you'd have to adjust cooking for fresh.
