Simple, delicious and enough for a crowd.
I take this into work when we have a pot luck or when there is a big crowd to feed. It's also great to freeze in the tortillas and serve later in smaller portions or even just freeze the mixture and serve over white rice.
This is my low cal recipe for the mexican drink watermelon water. Can also be frozen to make a great mexican fruit bar popsicle called a paleta and is only about 7 calories per 8 oz!
Okay I know these are not healthy but we eat them often so I added them and figured might as well make them public in case there is a day you have some spare calories and want a traditional Mexican dinner
