This is the type of stew you make when the veggies are on their last leg and there are a couple of leftovers that just need to be eaten. You can mix and match and make it your own. I had fun with this one.
A moderated version of onigiri (rice balls) for those who don't have nori (toasted seaweed).
Serve this with baked tortilla chips, or use as a burrito filling. If you prefer more fire, use hot salsa. Other great non-fat additions would be snipped cilantro or minced jalapeno.
This is a delicious summertime salad. You can switch it up a little bit if you don't like spinach, you could use iceberg. It's also delicious with a few chucnks of fresh tomato.
This arrangement of seasonings and vegitables are blended into a smooth as silk sauce. Sofrito is a great starting base for marinades, soups, dips, rice and bean dishes. I always use sofrito in guacomole.
