A healthy twist on a recipe I got in Florida. Very filling, easy to make and low in fat.
I was looking for a High fiber low fat wrap and I came uo with this. My girls loved them so I thought I would share the recipe you you.
This is a very thick and hearty soup that is perfect for those cool fall or winter dinners. It's very simple to prepare and ingredients can be substituted if you do not like one of them. I like to serve it with Tortilla chips on the side or broken into it. Sour cream, cheese (cheddar, colby or monterrrey jack), salsa and or pico de gallo all go well with it.
This recipe is so good and filling that sometimes I will make a meal off of 2 mushrooms. This is also very flexible for substituting ingredients. Instead of mushrooms, I have used the baby bell peppers halved lengthwise, removing seeds. I also plan to try it subbing crab meat for the sausage. I think it will be another winner!
My husband and I work opposite shifts, and it's hard to cook sometimes between work and life. This is easy because I put the ingredients in the crockpot and cook them overnight and he usually puts it all in the fridge the next day when I'm at work.
This is a great tailgate or party dip and this recipe is great for those who like to measure everything out and get an exact calorie count!
I love taco soup, and have tried several different recipes, I like this one because it is super easy to make. You just have to make sure that you select the low sodium canned items.
Serve with low fat sour cream on top or sprinkled with crushed tortilla chips on top (not in nutritional info)
Good way to use up any left over roasted vegetables. I had a lot left over, so they all went in to the slow cooker overnight with some beef stock and some herbs
My kids named this soup when they lived at home yet. We would all pitch in and cut up veggies.
