I was having "one of those days" and needed a quick dinner. I threw this together, and liked it so much, had to write down the recipe to make again. Even DH, who was not sure about it, loved it. Lots of veggies and easy to substitute what you have on hand. Great with a side salad and some bread. Enjoy!
Easy to make and tasty. Needed to use up bits and pieces of things in the fridge. Very tasty. Didn't think to use file. Would have been great with some seafood if you have it.
Delicious! Can also be cooked in a slow cooker. This recipe makes its own gravy. Once in the oven, don't peek. It has the best aroma when done.
Only 3 ingredients and super easy. Serve over rice or as an appetizer.
A little twist from the ordinary meatlof, any kind of solid veggie can be used, substitute ham for bacon if you like, or stuff with pepperoni, mushrooms and mozza cheese, brush top with pizza sauce instead of BBQ sauce.
