I threw this together to use up some acorn squash I had. I found a recipe and modified it some to what ingredients I had.
Cuts the calories, savory and sweet together make me happy! My fav is to add carmelized onions.
its a one of my favourite polish dishes, .I've put here 6 serving but it depends on how big your baking dish is.
Saute onion and buffalo until browned
Add salt, pepper, garlic to taste.
Add 1 cup of cooked brown rice.
Add 3/4 of 15oz can of organic tomato paste.
Set aside.
Cut off tops of peppers and hollow them out. Put them, upside down, into microwave dish with 1" water in the bottom. Cook in microwave for 5 - 6 minutes, just to make them softer...not mushy.
Pour out water from microwave dish, turn over the peppers and stuff them with the buffalo mixture. Top each of the peppers with the remaining tomato sauce. (Optional ... put 1TBS of grated cheese of your choice on top)
Cook at 350 for 30 minutes.
