A great way to get fish into your diet. My husband and I like it with a bowl of soup vegetable on the side.
I adapted this recipe to shrimp, because that is what I had thawed. I served it over wheat rice, that I had made another day. Plus, I only use low sodium soy sauce; this was not available on the food tracker at this time(will enter that on another day). The sodium may be much higher because of that. I adapted this recipe from Better Homes and Gardens Cookbook.

Just dip slices of zucchini into egg. Then put into a mixture of 1/2 cup flour, 1tbsp. salt, 1tbsp. black pepper & fry in the skillet containing the 2 tbsp. of vegetable oil.
