This is a concoction from my kitchen. I just kept throwing things in there. It turned out to be a light healthy and tasty dish. I'm trying to stay away from gluten so I didn't use a tortillas but you could wrap this in one.
You can cook up the rice ahead of time or use that Minute Brown Rice to speed this up.
This is a baked, gluten free option for fried tuna croquettes. You could also use salmon.
Great way to "grill" any white fish. We used yellow-eye sea bass and it is delicious. Also can use red snapper, trout, cod, and halibut. I intend to use this family favorite with all of these and anything else they drag up and fillet.
Great on Whole Grain bread/toast. I love to eat it with Pumpernickle & Onion pretzels or rolled up in Romaine leaves. Tasty, light and easy.
