I came up with this dish while thinking about what to do with some zucchini I still had.
PLEASE NOTE: This dish marinates the fish in lemon/lime juice mixture and must be refrigerated overnight.
Recipe can be varied depending on your preference of fruit. Also, the shredded Jicama adds a great source of fiber without taking away from the taste! I love to add it to meals wherever possible!
One Tip: before slicing open your lemons/limes... heat them for 30-40 seconds in the microwave. Then, slice in half and squeeze out the juice. Warming them increases the juice yield, and makes them softer (easier) to squeeze!

A lot of the ingredients were eyeballed. You can get away with less cheese to decrease the saturated fat. LOTS OF PEPPER

THIS IS A GREAT RECEIPE. I BOUGHT PACKAGE WHITE BEANS AND FOLLOWED THE RECEIPE ON BACK EXCEPT I USED HOMEMADE KETCHUP (LOW SOD) AND I ADDED EXTRA MOLASSES FOR COLOR AND MY TASTE
Based upon Garlic Shrimp by SHELLBERTANN. The cheese topping and noodles are NOT calculated in this version, so you can reduce or add a different type then I do (i.e. Ronzoni Healthy Harvest Whole Wheat).
Would also be good served over a salad or even brown rice. Very light taste so would be good as summer dish. Also, you can subsitute zucchini with yellow squash - dice all the veggies to the about the same size for uniform cooking.
I also changed the cooking direction - veggies should start first, as Shrimp takes very little time to cook.
