used to cook fresh fish
They cut the fresh fish into slices or small chunks
then they add the citrus juice and pepper
and you can eat it it right away, with some seasonning, fruits or vegetables (raw cook)...
or let it marinate during a night so it'll be entirely cooked by the acidity of the lime.
This version here is "quick Ceviche".. meaning not marinated during a night
but I guess you could try it any ways you want !
This recipe works well on a George Foreman Grill. Easy recipe that even my pickiest eaters love. Leftover is great on salad.
