Another Indo-American recipe coming your way! This is a healthy take on a very traditional fried Indian snack. My version can also make a great meal when accompanied by salad, rice or steamed veggies.

This recipe is not part of my diet but I make it for my son and cannot resist having a bowl.
I came up with this recipe when I learned that I wasn't getting enough fat or protein in my diet.
This recipe is made with coconut milk and curry paste and baked in the oven. The fish is tender, juicy and very tasty with the coconut and curry sauce. Of course this recipe can be doubled or more if needed.
You could also use Mahi Mahi if you don't have Tilapia
