I make my tuna salad with Cottage cheese instead of mayo. It cuts down the calories and bulks up the tuna salad. You can tell a difference in texture, but it tastes great.
Sea scallops are one of the leanest proteins there is with only 1.7 grams of fat per 8 ounces. Even better, they are generally inexpensive and super easy to prepare. I actually cook mine in my toaster oven using this recipe. (Photo coming soon)
If you've never had Bibimbap go out to your local Korean restaurant and get some immediately. It's a delicious layering of rice, cooked veggies, marinated beef, and an egg - served with a flavorful broth that you pour over it at your table. I had some leftover haddock from the other night so I thought hey, why not try Bibimbap with fish? It totally works.
Using a good quality tomato sauce makes this a super quick dish - easy for midweek supper but stylish enough for dinner with friends. I've use cod in this dish, but you could use any fish or seafood you prefer. Serve with rice, couscous or flat breads.

We enjoy this dish greatly. When pared with frozen peas, baked sweet potato and corn on the cob it is a "scrumpdillyicious" (to quote my sons) meal.
