My Swiss-American sister-in-law always has fresh dressing to go on her yummy salads...she usually makes this with EVO and apple cider vinegar, but I tweeked it a tad to use up ingredients I had on hand.

This is my favorite dressing - also a hit with company! Is my mother's but I've tweaked it a bit - can add blue cheese instead of feta, red pepper flakes, etc.
