A very easy to make, full of fresh green colors, high protein salad.
I love this Salad for BBQ or Potlucks. We'll also use it with a Chicken breast to replace dinner. Great flavours.
Originally from epicurious, but I've changed several ingredients and insist that you use Glass noodles also known as bean thread vermicelli or Sai Fun for the GI benefits.
This Salad is full of all the good stuff and packed with vitamins and potassium. A great way to get your daily requirements. Filling and gives you something to help keep you from extra servings of things that might not be 'as good' for you.
Great alternative to the usual lettuce based salad. My brother-in-law just got back from Greece where this dish was inspired.

I changed this recipe up a bit to make it a salad. Sometimes I toss a mere 1/4 cup of rice noodles to it, which you can do to make it "heartier." While higher on the sodium than I desire, it never fails to delight.
i really like this salad but after knowing how much sodium and calories it has, i think i will modify it slightly....
This is a similar recipe from Trader Joe's. We don't live near a TJ, so we had to change up the recipe with ingredients that we could get at our local stores.
Romaine salad, served with warm grilled chicken slices and sauce.
Any kind of sauce can be substituted. Thai peanut sauces are nice as well.

My mother made this recipe for us for many, many years. I have revised it a bit by using lighter salad dressings. If you enjoy carrots, this is a light crunchy salad that is very satisfying. The Catalina dressing and cinnamon gives it a special flavor, The dressings may not seem like a lot but give it time to settle in.
