I love anchovies in a Caesar Salad or a Pizza. The little guys are packed full of healthy fish oils, and the kind packed in olive oil add an Italian note to the pizza taste. Here is a high fiber, version of Pizza for One (or two) on a Low calorie-high fiber English Muffin that uses tomatoe paste (concentrated nutrition) as well as fresh tomatoe. Like it really cheesy? Add a slice of reduced fat Swiss or Mozzarella but include those calories on your own. It's the salt that makes this work for me, so if sodium isn't your thing, cut back on the anchovies and the cheese, but then, whatza da point, eh?
The calories/servings on DENIBREITENBACH's vegan lentil burgers never come out right for me. This is how mine turned out. 12 half cup servings formed in to patties.
I came up with this cool and creamy dressing for spicy sandwiches, like a curried couscous pita, gyro, etc. I made it when I didn't have yogurt or cucumber to make Tzaziki!
This is a very tangy, moist Pulled Pork BBQ. I got this from a slow cooker cook book (can't remember the name of the book) but I modified the recipe. The original recipe calls for 2 cups vinegar and 1 cup ketchup. I reversed it and use 2 cups ketchup and 1 cup vinegar.

The origins of pesto are somehow uncertain but some historical letters found in the archives of Genoa (Liguria) mention a dressing called "battuto d'aglio" (literally battered garlic) back in the 1600's. Basil has been known to all the Mediterranean people since the age of the Romans, probably originating from the northern coasts of Africa.
These chicken patties are very moist and flavorful. They are great on a whole wheat bun with lettuce and tomato slices.

Since I did not have pumpkin or sunflower seeds, I doubled the sesame seeds.
These are made like a tuna melt but with all natural white chicken instead and broiled instead of fried :)
This recipe is adapted from a weight watchers recipe...and tastes VERY good
