This is my take on the Southern Pimento Cheese recipe on AllRecipes. I used lower fat cheeses and a cut way down on the mayo, subbing it with fat free Greek yogurt. Dh & I both loved the results so much, next time I plan to omit the mayo completely.
I'm not big on mayo so I don't even miss it, however hubby loves the stuff and still enjoys this. I might suggest slowly making the switch from mayo to light sour cream.
