What could be better than a meal you don't have to cook?
If you are finding you have a deficiency in potassium, the sweet potato is a lovely and tasty meal. If you have room for a little more sodium, hummus can be substituted for the neufchatel (lowfat cream) cheese.

One of my favorites!! This recipe is very versatile. I used what I had on hand. Grapes or almonds can be added but be sure to add them to the nutritional values. You could buy a ready cooked chicken to save time.

It is slightly crisp on the outside and delightfully soft on the inside - the way commercial bread is! It is way healthier than most commercial breads. We've tried this with both Silk and homemade soymilk - it works with either kind.

A quick and simple recipe and very yummy..one of my husband and my fav's. I saw this recipe in a cookbook once - not sure what one so I can't give it credit. I usually do not follow recipes. Just get the basic idea and the modify to our liking. Hope you enjoy it as much as we do.
