This recipe is adapted from one found on www.smittenkitchen.com. Makes 8 servings of 1 cup each. The ingredients are approximate, there is no need to be precise with this. Pretty much just add everything to taste! (This is also great as a salsa like dip for light tostito chips!) For more visual effect, use 1 green pepper and 1 each of red, orange, and yellow.
This was my grandmothers recipe, she and my dad made the best Pickled Beets. This is the first time I have made them by my self. So far so good. They all sealed, next is to try them. I can't wait.
Zinc Cafe in Corona del Mar serves a similar salad: Delicioso!
"The Girls" love me when I bring this to get-togethers :-)
A festive Chanukah treat for whole the family! Best eaten right away with whatever flavor applesauce you want!
Pronounced ma-zhe-dra, this is a vegan Middle Eastern bulgur wheat, lentil and onion pilaf that is incredibly yummy! I first had it at a now (unfortunately) defunct Middle Eastern cafe and the full-blooded Syrian owner told me what the ingredients were, so after they closed and I was craving this dish, I threw together the ingredients in amounts I felt were similar to hers and it turned out pretty authentic tasting! You can also use equal amounts of whole-grain brown rice instead of the bulgur, but I prefer the bulgur wheat. Nutritional info listed is using the bulgur.
This simple side dish pairs perfectly with grilled chicken and broiled salmon.
Tasty and worth the effort. My kids love wontons!
A drizzle of olive oil and a little cinnamon sugar combine to make a sweet glaze on these yummy fries!
As we walked in with this once at a potluck we heard someone say, "Now the good food's here!"
Three distinctive flavors--fruity orange, faintly licorice fennel and red cabbage--come together as one in this satsifying salad. The dressing is a slightly sweet mix of orange juice concentrate and balsamic vinegar.
This is my attempt to make a classic casserole a little lighter... we take it to all sorts of events and everyone always loves it!
Delicious as a side-dish or a snack!
This is a deliciously spicy taste of Fall, anytime you care to make it. I've used it to fill turnovers and mini-pies, though it would be delicious and guilt free just eaten as a pudding! I reccomend using a food mill to puree the roasted component if you're picky anout texture, otherwise a food processor should make it wonderfully! Makes about 3 cups.
This tangy, fresh vegetable salad hits the spot alone or with fish, or as a garden salad topping. I found that Newman's Own Family Recipe Italian Dressing was similar to mine, lots faster to make, and very low carb. It has Parmesan cheese in it which add a nice flavor.
Want to know the secret to great chili? Start with great spices--and skip the packets at the supermarket, which are full of sugar and salt. Make your own to save money and skip the salt.
