This was my grandma's recipe that was wonderful for breakfast! Good amount of fiber and tastes great! I tweaked it a bit in substituting half w/w flour and half white flour. Also substituting half sugar and half splenda.
**Unused Batter will keep in refrig for up to a month!
This stores in fridge for several days. May need to stir before serving due to pineapple juice separating. Tasty! I use it for dessert. Make it even less calories w/ low or non-fat cottage cheese and sugar free or fat free Cool Whip. I also use other fruit and jello flavor combinations. Try it!

A flavorful side dish for grilled meats! I love laying down a layer of greens, a layer of this salad, then topping it off with some flat iron or flank steak.
