Pumpkin Oatmeal Snack Bread
1 1/2 cups oatmeal
2 teaspoons baking powder
1 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/8 to 1/4 tsp. Ground Cloves
2 tbsp. cornmeal
¾ to 1 cup Splenda (to taste)
2 tablespoons hot tap water
1/2 cup pumpkin pureed
1/4 cup egg beater or 1 egg
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1/2 cup skim milk
Preheat oven to 350 deg. F. Mix dry ingredients with wet ingredients. Pour into an 8 x 8-inch baking dish sprayed with Pam. Bake for 40 minutes or until inserted toothpick is clean. Very Moist!
I found a recipe in the book that came with my new bread machine. I substituted Splenda for the sugar and Egg Beaters for the eggs to come up with a lower fat/lower calorie recipe. I used the quick bread setting on my machine. It turned out great!
you'll go "bananas" for this recipe.
I redid the guestimated amount so it doesn't comeout as a 3,700 calorie snack...uuuggghhhh!
